Jeff Stevenson demonstrates one of the most misunderstood properties of steam - it is invisible. What you normally see coming off the top of a heated pot of water is steam that has cooled and condensed back into tiny drops of water vapor. It is possible to superheat steam. By adding heat to the invisible steam it's possible to raise the temperature well above 212 degrees Fahrenheit. In fact, you can even ignite a match with superheated steam.
