[ Ingredients ]

[ Chicken batter ]

Cut chicken (No. 7) 1
Milk 1 cup (190g)
Frying powder (for batter) 1 cup (120g)
Frying powder 1 cup (120g)
Flavoring salt 1/2 tbsp (5g)
Pepper 1/3 tbsp (1g)
Cooking oil 1.8L

[ Seasoned fried chicken sauce ]

Starch syrup 4/5 cup (220g)
Ketchup 1/3 cup (75g)
Red pepper paste 1/4 cup (45g)
Dark soy sauce 3.5 tbsp (35g)
Minced garlic 1/2 cup (65g)
Fine red pepper powder 3 tbsp (15g)
Brown sugar 1/3 cup (50g)

[ Directions ]

1. Rinse the cut chicken thoroughly and drain out water.
2. Preseason the chicken meat with flavoring salt and pepper.
3. Soak the preseasoned chicken in milk for 20 minutes.
4. Add all the ingredients for the sauce in a pan and cook until thickened. Keep stirring.
5. After 20 minutes, add 1 cup of frying powder to chicken.
5. Put frying powder to a plastic bag and add the battered chicken and mix.
6. Add cooking oil to a large coated pan and preheat to 160-170 degrees.
7. Once the oil is heated, add the battered chicken and deep-fry twice. Drain the oil.
8. Mix with the sauce.

* Adjust the amount of frying powder according to the size of chicken.

[ Directions for the sauce]

1. Add starch syrup, ketchup, red pepper paste, dark soy sauce, minced garlic, red pepper powder, and brown sugar to a large pan and mix well.
2. Over medium heat, cook while stirring.
3. Once it boils, remove from heat.
