I made the Golden Snitch dessert in honor of the Harry Potter 20th Anniversary Return to Hogwarts!

My rendition of Reynold Poernomo’s The Snitch with his brown butter mousse and honey feather tuiles. I made miso caramel for the filling and salted crumble for the additional crunch. I also used Lychee Raspberry Gelato from a local gelato shop called Birds of Paradise.
