Kuku, also spelled kookoo, is my favorite. It's like a Persian frittata packed to the brim with piles of herbs. If you’re not used to staring down a mountain of produce, feel free to prepare it in advance.
The Kuku sabzi recipe is a great solution for those fresh herbs wilting in your fridge. You can certainly add other greens, like baby spinach.
I particularly love kuku sabzi for the contrast between its vivid-green herbaceous interior and its dark, sweet crust. Kuku is traditionally served with flatbread and a selection of crunchy and acidic condiments to balance the sweetness of the herbs
Kuku Sabzi is a traditional Persian omelet or Persian Herb Frittata, typically served at Nowruz (Persian New Year). The herbs symbolize rebirth, and the eggs symbolize fertility.

Kuku Sabzi Ingredients;
4 oz parsley
4 oz spinach
4 oz green onions (scallions)
4 oz dill weeds
4 oz cilantro
4 oz chines chives
5 eggs
¼ pinch chili (optional)
¼ tsp black pepper or to taste
2 oz barberries
½ tsp salt or to taste
½ tsp turmeric
4 oz walnuts
2 garlic cloves
2 fl. Oz olive oil or as needed
