We do prepare aloo gobi. But today we are making aloo gobi masala that too dhaba style. It has perfect dhaba style consistency, color too. You will get tips and tricks for making it perfect dhaba style in this recipe. This is easy to prepare and doesn’t require many ingredients. This is a real quick recipe. Ingredients:
• 3 medium size chopped Tomatoes
• 5-6 Garlic cloves
• Ginger
• 2 tbsp grated Beet root
• 2~3 tsp Mustard oil
• Chopped Potatoes
• Cauliflower florets
• 1/2 tsp Cumin seeds
• A small piece of Cinnamon
• 2 Bay leaves
• Slit Green chili
• 2 medium size finely chopped Onion
• 1 tsp Coriander powder
• 1 tsp Garam masala
• 1/4 tsp Turmeric powder
• 1 tsp Red chili powder
• 1 tsp Oil
• 1 tsp Besan
• Hot Water
• Salt to taste
• Kasure methi (Optional)

Method:
• For making tomato puree take tomatoes, garlic, ginger, beet root in a blender jar and blend it
 into puree.
• Beet root reduces sourness of tomatoes, gives nice texture and color to puree and is healthy
 too.
• Tomato puree is ready.
• For making sabzi, heat up mustard oil in a pan and add potato.
• Fry until potato gets nice golden color.
• Transfer potato into a dish.
• In the same oil add cauliflower florets and fry well.
• Transfer the florets into a dish.
• In the same oil add cumin seeds and let it splutter.
• Add cinnamon, bay leaves, green chili and fry it a little.
• Add onion and fry until onion gets nice golden color.
• Add tomato puree and fry until it releases oil.
• When masala begins to release oil add coriander powder, garam masala, turmeric powder, red
 chili powder and mix well.
• Fry everything well together for about 2 minutes.
• Move the masala along the edge of the pan and add a little oil in the remaining space.
• Add besan in the oil and fry it well.
• Mix the fried besan well with the masala and add hot water.
• Mix well and add salt.
• Mix well and add fried aloo and gobi.
• Mix well, cover and simmer for at least 7-8 minutes.
• Remove the lid and mix well once.
• Add kasuri methi and mix well.
• Kasuri methi is optional. You can skip it if you don’t want.
• Aloo gobi is all ready.
