Delicious eggplant stuffed with kofta and red sauce, this is another excellent dish to serve with rice
These eggplants 🍆 have been cut into very thin packets and stuffed with homemade kofta and delicious red sauce, baked in the oven until the sauce has thickened, and everything is cooked to perfection.
Use preferred eggplants; Chinese eggplants, Globe Eggplant, and Italian Eggplant works wonder for this recipe as well.
You can make some plain ones without red sauce, bake them, and then top them with a mixture of plain yogurt and garlic.
INGRIDENDETS:
3-4 eggplants
2 tbsp grated onions
3 cloves of garlic grated
¼ cup finely chopped parsley
2 cups (300 grams) ground beef
2 tbsp mild pepper paste or tomato paste
1 tsp smoked paprika
½ tsp black pepper
1 tsp Vegeta seasonings.
Salt to taste.
Red sauce:
2 cups of hot water
¼ cup tomato paste
1 tsp Vegeta seasonings
½ tsp black pepper
1 tsp smoked paprika
Salt to taste
Extras:
Parsley to sprinkle on top
A drizzle of olive oil
