This Healthy Gajar Halwa Recipe is a must try! It’s a healthy and yummy treat for this season. I’ve given this halwa a healthy twist by taking out the refined sugar and adding dates for the sweetness. Which not only add some nutrition but make this delightful dessert so delicious that one serving wouldn’t do justice at all 😋!!

INGREDIENTS
*500 gm grated carrots/ गाजर
*1/2 cup seedless dates/ खजूर
*1/2 tsp cardamom powder/ इलाइची
*2 cup milk/ मिल्क
*2 tbsp ghee/ घी
*2-3 tbsp chopped nuts/ पिस्ता, काजू
*some water to soak the dates/ पानी

INSTRUCTIONS
1- For the date paste, add dates in a bowl, along with some water. Let them soak for around 20-30 minutes or till they turn soft.
2- Meanwhile add grated carrots in a medium heated pan, followed by milk. Stir, till the milk comes to boil. Now cover the pan and let it cook for around half an hour or till the milk reduces and carrots turn soft and tender.
3- Till the halwa is cooking, add soaked dates in a blender and blende till smooth and creamy. ( You don’t want to throw the date water, it can be used to make smoothie or any dessert ).
4- After half an hour when the halwa is almost done, add in the ghee, cardamom powder, nuts and the date paste. Keep stirring and cook the halwa for 4-5 minutes till everything is well combined and the liquid in the halwa is completely absorbed. Serve the halwa in a bowl, garnish with more nuts and enjoy!!
