Making Hafteh Bijar (traditional persian Pickle recipe)

Mixture of eggplant with tops cut off, green peppers, green tomatoes, crushed garlic, and a bouquet of finely chopped herbs (mint,eryngium planum leaves,flat sea holly leaves and pennyroyal). all ingredients are salted and preserved in vinegar covered to a depth of one finger.
