Mac n Cheese Cupcakes aren’t only for weddings. Cook macaroni according to package instructions. Melt 2 tablespoons of butter over medium heat. Add 2 tablespoons of flour and whisk until thickened. Whisk in 1 cup of milk and heat until just boiling. Continue stirring and add 2 cups shredded cheddar cheese. Stir in macaroni. Mix 1 tablespoon melted butter with 1/2 cup bread crumbs and a shake of dried parsley.fill up muffin cups with the macaroni. Don’t be shy. Top with the bread crumbs and 1/4 cup shredded mozzarella. Cook at 425 degrees for 20 minutes. You’re fancy like a caterer now.
