Persian Eggplant Spread (Kashk-e Bademjan) - Cooking with Yousef

Today we make a Persian appetizer best served with bread at parties known as Kashk-e Bandemjan (or Bademjoon).
This is a vegetarian dish made with Eggplant and Persian Whey known as Kashk. It is somewhat similar to Baba Ganoush but they are prepared differently.
