Khoresht-e-karafs is a wonderful and fragrant celery based stew with lamb. Like most Persian stews the key to its wonderful flavours is that it is slow cooked on low fire until all the flavours are infused together. Recipe:
- 500g Fresh parsley, finely chopped
- 500g Celer, cut into 1-inch chunks
- 3 tbps. dried Mint

- 1 large Onion, finely chopped
- 1/2 tsp. black pepper
- 2 tsp. tumeric powder
- 750g Lamb meat, cut into cubes
- 4 cups water

- 2 tsp. salt

- 1/4 cup lemon juice, add more to suit your taste
- vegetable oil
