Persian Vanilla & Raisin Cookies (شیرینی کشمشی)

Raisin cookies were like chocolate chips cookies for us, and I grew up eating them almost every day.
These cookies have crunchy outside and soft inside, and I can’t say enough about how addictive these cookies are.
#Raisin Cookies:
This recipe will yield about 25-30 cookies depending on the size of the dough.
#Ingredients:
Flour 290 g + 1 tbsp. for coating the Raisins
Eggs 2 (room temperature)
Pure Vanilla Extract 2 teaspoon
Powdered Sugar 230 g for cookie plus 1 tbs. for dusting
Butter 150 g (room temperature)
Raisins 160 g
#Utensils:
Baking sheets
Parchment paper or baking mat
Small ice cream scoops
Bowls
Mixer
Spatula
Pre heat the oven @320F and bake them for 15 minutes to 20 minutes until they are ready.
Let them cool down completely and then remove them from baking sheet or parchment paper.
