Lao Food | Laotian Sheatfish Curry (Kale Pa Sa Ngoua) | LA Times Food
LA Times featured Laotian recipe from late Chef Phia Sing in the book "Traditional Recipes of Laos"
Ingredients:
2 cans unsweetened full-fat coconut milk (14oz each) chilled
2 sprigs cilantro
1 medium yellow onion
6 small shallots
4 inches fresh ginger
3 tbsp mild curry powder
1 tbsp tomato paste
2 cups fish stock or chicken stock
1 lb russet potatoes
3 fresh Thai chilies
10oz catfish
crushed red chili flakes and fish sauce to taste
garnish with sliced scallions
