Muhallabia recipe |sweet mahalbiya | Muhallabieh |Arabic Milk Dessert | malabia | malabi pudding | muhallabia rooh afsa recipe | mahalabia milk pudding
Muhallabia is a Middle Eastern Dessert , which is very light,and creamy and is prepared with very simple ingredients .
It can be served with or without glaze, garnished with pistachio, almonds, or desiccated coconut.
Ingredients:
🔸Full cream Milk 1 Liter
🔸Sugar 1/2 Cup
🔸Cornflour 1/2 Cup + 1 Tbsp
🔸Cream 1/2 Cup
🔸Rose water 2-3 Tbsp
( OR Rose essence 1Tsp)
🔸Pistachio, Almond, OR
Desiccated coconut for garnishing
For Rose Glaze:
🔸1cup water
🔸3/4 cup sugar
🔸1 Tbsp cornflour
🔸2 Tbsp Rose water
🔸1/2 Tsp red food colour
Note: If rose water is not available, then use 1/2tsp Rose essence , ------------------ OR
as a substitute, use any red syrup
like Roohafzah, mixed with water and corn flour, and cook as shown in the video.
Method :
In a deep pan, add milk, sugar and corn flour.
Whisk well untill free of lumps.
Heat on Medium Low flame
for 1 or 2 minutes.
Add cream and whisk again.
Cook on Medium Low flame stirring constantly untill it boils.
It should be thick but pourable.
Remove from stove .
Add rose water and mix.
Pour in a serving dish or in separate bowls/goblets for individual servings.
Leave it at Room temperature for sometime .
Meanwhile, prepare the rose glaze.
Roze Glaze :
Add water, Sugar and corn flour
in a pan.
Add Red food colour , corn flour and rose water (or rose essence).
Cook on medium low heat , stirring constantly untill it thickens and reaches honey-like consistency.
Gently pour on top of the Mahalabiya,with the help of a turned over spoon or spatula.
Tap , so that it settles from all sides .
Garnish with pistachio, almonds or desiccated coconut, as liked.
(Optional : Rose petals can also be added on top along with the dried fruits).
Keep in a refrigerator for at least 4 hours.
Serve chilled.
