Today I made a jelly cake with beautiful rainbow colors.
There is no need for a special cake mold, and this cake can be made in an airtight container at home.
But it is so dazzlingly beautiful.
I made it in a large size, but you can make it in a smaller size.
As for the ingredients, I used fruit-flavored juice that can be easily found at a nearby supermarket.
You can make a delicious jelly cake using your favorite fruit juice.
The combination of soft and fluffy vanilla cake and soft jelly is fantastic.
I made it in rainbow colors full of excitement and it was just fantastic.
Now, let’s make a beautiful rainbow jelly cake.

● Cup measure standard
237ml = 1 cup
15ml = 1Tbsp
5ml=1tsp
1 egg (53 g without shell)
Heavy cream (38% milk fat)
(Chocolate is chopped, flour is before sifting)
● Finished cake size [27cm*19cm*3.5cm (H)]
● Vanilla cake * 6x
(Mold size: 26cm*34cm)
5 yolks (80g)
15 g sugar
a pinch of salt
5ml Vanilla extract
43 g vegetable oil
52g milk
95g cake flour
5 egg whites (175 g)
5ml lemon juice (optional)
87g sugar
● Basic Cheesecake
135g cream cheese
80g plain yogurt
48g sugar
1/2 Tbsp lemon juice
5 g powdered gelatin
30g water
160g heavy cream (60% whipped)
● Rainbow Rainbow Jelly
(** The recipe below is required for each color.)
● Pink – Grapefruit Jelly
375g Bundaberg Grapefruit Juice (1)
325g hot water
255g sugar
17g lemon juice
38g gelatin
● Orange – Orange Jelly
Mogu Mogu Orange Juice 500g
200g hot water
135g sugar
15g lemon juice
35 g gelatin
● Yellow – Mango Jelly
Mogu Mogu Mango Juice 500g
200g hot water
135g sugar
15g lemon juice
35 g gelatin
● Green – Green Apple Jelly (Green Grape Jelly)
700g hot water
240g sugar
10g lime juice
85g green apple syrup (or green grape syrup)
35 g gelatin
(If you don't have green apple syrup... make it by adding 23g lime juice, more sugar, and more food coloring.)
● Blue – Power Ade Jelly
135g Powerade Juice
565g hot water
255g sugar
15g lemon juice
38g gelatin
● Purple – Grape Jelly
135g Powerade Purple Storm Juice
565g hot water
255g sugar
15g lemon juice
38g gelatin
