Italian Ricotta Cookies
Delicious Ricotta Cookie Recipe, festive for the Holidays
ingredients
half pound butter
one and three quarters cups white sugar
two eggs
fifteen ounces ricotta cheese
two tablespoons vanilla extract
four cups all purpose flour
one teaspoon baking powder
one teaspoon baking soda
five tablespoons milk
one and a half cups confectioners sugar
one teaspoon almond extract
quarter cup colored candy sprinkles
Directions
preheat oven to 350 F
in medium bowl, cream together butter, sugar, eggs ricotta, vanilla. Combine flour, baking powder and baking soda, blend into the creamed mixture, mixing in additional flour as necessary to firm workable dough. Roll dough into teaspoon sizes balls and arrange in ungreased parchment covered cookie sheet.
Bake about ten minutes until lightly brown.
In medium bowl, beat milk, confectioners sugar and vanilla, or almond extract, until smooth. Spoon over warm cookies and sprinkle with sprinkles.
