Tasting the famous Ragag or Rakak bread, Shuwa, the national Omani dish, camel soup and Arsiya, and other famous Omani dishes at the spectacular Rozna restaurant in Muscat, Oman and visiting the traditional market of Muscat were all part of our plans on the second day of our stay in Muscat.
The magnificent Rozna restaurant is designed as a big castle, it is magnificent, and Mr. Suleiman, the owner of Rozna, explained some key points about this complex.
The restaurant has a large door and a small door. The smaller door is for the public and the big door is for famous people or an army.
There are 30 rooms here, each room has its own name. Names such as grandfather's room, grandmother's room, Busher's room, which is one of the areas of Muscat. The rooms are considered for different families with different income levels, depending on the decor and ceiling height and many other things. Some people like to sit in more private rooms.
It was time to taste different foods and items that were prepared in the restaurant every day, such as the famous Ragag or Rakak bread, which is a famous bread made from thin dough on a hot taweh, along with eggs and Omani chips, it was extremely delicious. We also tried the Omani camel soup, an extremely delicious combination of fresh camel meat, salt and pepper. The way to make this soup is to boil the meat for an hour, then throw away the juice and add water again with garlic and ginger, turmeric, pepper, salt and a whole onion in the pressure cooker.
When the camel meat is tender, they add herbs like mint and coriander and let it cook well. The soup has a unique taste.
They also prepared other various items for us, such as sambusas, kachori, masanif, which is eaten with tamarind sauce. Arsiyah that's much like harees made with wheat but arsiyah is made with rice, it also has meat and cardamom, which are mixed together, with Omani ghee and special spices and salt. We even tasted shuwa, the national dish of Oman.
The recipe of this dish in this restaurant is that they marinate the lamb meat or a part of the meat with special Omani sauce and spices, then they wrap it in banana leaf and put into the oven. It takes about 9 hours for it to slowly cook.
Shuwa is eaten with majboos and a special sauce and I must say it was extremely delicious. Next, we tasted some drinks, such as karak tea, which is a combination of milk and tea with Mandazi a type of sweet from Zanzibar, and also Soleimani tea, which were all very tasty.
Next, we went to visit the traditional Omani bazaar in Matrah Corniche, which is the old texture of the city and Matrah Bazaar, is where all Omani handicrafts are sold, all kinds of rosaries and beads, jewelry, etc.
Traditional coffee houses are located at the entrance of this market, which have been places for people to gather and meet each other since back in the day, and nowadays most of the old people welcome new tourists.
