Quince jem:

Quince one kg
 Sugar 800g
 one quarter teasp of citric acid powder
 Cardamom powder one-half teasp

 Wash it and chop it quince the desired size, then pour three glasses of water on it and cook with the lid closed for an hour and a half on very low heat. After it changes color, add sugar and continue cooking again.  Finally, when the color of the jam is perfect, add the lemon powder and cardamom powder and let it cook for another quarter with a gentle heat.
