Ricotta Cheese Cookies | Italian Christmas Cookies #shorts
Want to make these soft like cake iced Christmas cookies? This recipe is so easy and it's secret ingredient is ricotta cheese.
Ingredients :
1 cup butter (2 sticks; I use unsalted)
2 cups white sugar
1 container of ricotta cheese
3 teaspoons vanilla extract
1 teaspoon salt
1 teaspoon baking soda
4 cups of flour
1 cup powdered sugar
3-4 tablespoons of milk
Sprinkles
Directions:
Preheat oven to 350 F.
In a standing mixer, cream butter and vanilla.
Add the white sugar.
Add ricotta cheese.
Then add the flour along with the salt and baking soda.
Make little balls and drop on a parchment paper lined cookie sheet.
Bake 10 -12 minutes or until the bottoms turn light golden brown.
Let cool.
In a bowl stir milk into the powdered sugar.
Spread over cooled cookies.
Top with sprinkles.
*They do not need to be refrigerated but keep in an airtight container. They can last up to over a week and you can even freeze them!
