Hi it’s Duidui here. In Yunnan, roses are not only beautiful but also delicious. When I was a child, my grandmother planted a few roses and every year she would make our own jar of rose petal jam, locking the whole summer's fragrance into a spoonful of rich sweetness.

Ingredients for Rose Petal Jam:
300g of edible rose petals
5 tbsp of sugar
2 tbsp of honey

Ingredients for Ice porridge:
100ml glutinous rice
800ml water

Ingredients for brown syrup:
100ml brown sugar
150ml water

Toppings for Yunnan style ice porridge:
roasted peanuts, sesames, candied fruits and fresh fruits etc.

Steps:
Prepare 300g of edible rose petals
Wash several times until it’s clean
Wipe the petals with kitchen towels
Add 3 tbsp of sugar into the petals
Rub it well with hand
Add 2 more tbsp of sugar and 2 tbsp of honey, mix them well
Seal it in a jar, and let it preserve in the fridge for at least 1 month
After 1 month, the rose petal jam is ready

Let’s make a Yunnan summer dessert: icy porridge
Prepare 100ml glutinous rice and 800ml water
Bring it to boil, then lower the heat and simmer it until well cooked
Let the porridge chill in the fridge before use
Prepare a brown syrup: Add 150ml water into 100ml brown sugar
Bring it to boil and simmer it until slightly thickened

Let’s assemble the dessert: Put few spoons of cold brown syrup on top of the cold porridge
Sprinkle roasted peanuts, sesames, candied fruits and add rose petal jam on top
It also goes well with fresh fruits
