قابلی پلو یا کابلی پلو خوراک مجلسی و مهمانی افغانستانی‌ها به ویژه باشندگان شمالی افغانستان می‌باشد. قابلی پلو در کشور ازبکستان هم یک غذای مرسوم است و البته در شهر‌های شمالی ایران مابین مردمان ترکمن هم غذایی نزدیک به قابلی به خصوص در شب یلدا و شب نوروز پخته می‌شود. قابلی پلو غذای ملی افغانستان می‌باشد و در کشورهای آسیای میانه شهرت زیادی دارد. همچنین امروزه افغانستانی‌ها با ساخت رستورانت‌ها در کشورهای غربی باعث گسترش شهرت قابلی پلو شده‌است. علت چندگانگی انواع آن در کشورهای مختلف بدین خاطر است که این غذا در مناطق تحت حاکمیت خراسان بزرگ در دربار مرسوم بوده و به همین خاطر نزد اهالی خراسان بزرگ پخته می‌شود و در دستور پخت اندکی متفاوت هستند اما پایه و اساس مواد اولیه و غذایی یکسانی دارند.
