The city of Kashan is the largest center and producer of the best and purest Mohammadi rose water in the world, and on this trip we are going to get interesting reports about traditional rose water extraction and of course from Rabee rose water factory, which is the most prestigious rose water brand. Kashan is a historical city in the north of Isfahan province, which is known as the city of flowers and mohammadi roses and historical houses. Before entering Kashan, we came to the beautiful area of Niasar around Kashan, where traditional rose-picking is done every year in spring, especially in May and early June, and it also has a famous and very spectacular waterfall. We happened to go to an old house called Mahlouji, where rose water is extracted in the traditional way.
The scent of Mohammadi flowers was everywhere and when we breathed, our souls and bodies were refreshed. The traditional method of rose water extraction is that about 30 kilograms of Mohammadi rose flowers are poured into steam boilers and 45 liters of water as well as rose water is poured on the flowers. In front of the boilers are copper pitchers in a pond with cold water flowing through it. An aluminum tube from those copper pitchers is attached to the boilers. The bottoms of the pots are lit and rose drops are poured into the pitchers through these aluminum tubes. It takes eight to twelve hours for the pitchers to be filled with rose water. When the pitcher is full of rose water, it is left for an hour to cool down and a light fat-like layer is produced on top, which is called rose perfume.
Rose water has many uses for making all kinds of food or desserts such as halva, shole zard or gheimeh Nesar stew and has many healing properties such as helping to improve gastrointestinal diseases, strengthening the stomach and heart and many other benefits. After picking roses, we were walking in the streets of Niasar when I came across a very tasty shop, which had 4 nuts concoction consisting of four layers. Sesame, coconut, saffron coconut and another layer of sesame and on it are fragrant Mohammadi rose flowers, almond kernels, pistachio kernels, cashews and are extremely nutritious and delicious. Then we went to a 400 year-old public bath called the Safaviye bath, which dates back to the Safaviye era.
The bathroom has a Khazine (pond) and its octagonal entrance is separated from the outside of the bathroom by corridors. It has two separate entrances on the north side and the main entrance opens to the porch and the other entrance enters the warm house directly.
