French onion soup
is a type of soup usually based on meat stock and onions, and often served gratinéed with croutons or a larger piece of bread covered with cheese floating on top.
French onion soup may be served as a meal in itself or as a first course.
Throughout history, they were seen as food for poor people, as onions were plentiful and easy to grow.

Ingredients
1.5 kilograms Brown/yellow  Onion
2 Tbsp olive oil
2 Tbsp butter
1 Tbsp plain flour/all-purpose Flour
1 Tbsp sugar
1/2 tsp dried thyme (optional)
1 tsp   salt
2 - -  bay leaf
3 - -  cloves garlic - Chopped
4 - -  unsalted beef stock cubes with 1 litres boiling water
4-8 -  slices baguette (depending on size)
50g - Cheddar cheese
Parmigiano-Reggiano and Lime zest or Chives for garnish
This recipe will serves for 4-6

INSTRUCTIONS
Step 1
-Peeled and thinly sliced 1.5 kilograms Brown/yellow  Onion
-Heat the olive oil & butter on medium heat. Add the onions
-Add the salt and fry with the lid on for 10 mins until soft.

Step 2
-Add sugar and garlic cloves and
-Continue to cook until the onions are well browned, about 20 to 30 more minutes.

Step 3
-Add the plain flour and stir well (about 1-2 minutes)
-Add the stocks, bay leaves, and thyme. Bring to a simmer,
-cover the pot and lower the heat to maintain a low simmer.
- Cook for about 30 minutes.

Step 4
-Slice the baguette into  (20 mm) thick pieces
-Arrange them in single layer on baking sheet , Brush with oil
-Bake at 180˚C for 5-6 minutes, until the bread is toasted and golden around the edges.
-Remove and set aside.

Step 5
-Remove the whole bay leaves pieces .
-Fill each bowl 2/3 full with hot soup.
--Top each bowl with 2 slice toasted bread.
-Grating the Cheddar cheese on toasted bread,as much as you like!

Step 6
-Bake at 180˚C for 5-10 minutes or until the cheese has melted and bubbly and become slightly golden.

Tip and Tricks:
- Leave the root on when slicing the onions. It holds the onion together and helps to reduce the inevitable tears!
-The first important  is the stock, If you use boxed stock, taste it first! If you don't like the taste, don't use it.
-The second most important element is to properly caramelize the onions. Caramelizing the amount of onions needed in this recipe will take at least 40 minutes.
-Serve immediately – and don't forget to warn your guests that everything is very hot!
-Taste the soup before putting it in the oven, and if it needs more seasoning, don't be afraid to add more!
-Flour is help thicken the soup. use all-purpose, but you’re welcome to use a gluten-free flour blend.  Or just omit the flour.
-The soup can be made up to 4 days ahead.
-You can freeze this soup without the cheesy bread up to 2 months.
-You can skip the broiling part, make cheese toasts on a baking sheet and top the soup with those ,If you don’t have oven-safe bowls.
-The classic way to make this soup is to use large yellow onions. But feel free to using white, red, sweet, or even a combination of all four.

همین‌طور که از اسمش پیداست سوپ یگ غذای گرم و آبکی برای روز ها و شبهای سرد است و وقتی خیلی چیزی دم دست نباشه مجبور به ابداع غذا میشوید .
در ابتدا ,این سوپ غذای مردم فقیر رومن ها بود تا این که در قرن هجدهم در فرانسه باز آفرینی شد ولی تا حدود صد سال بعدش هم خبری ازش نبود تا یک رستوران تو نیویورک  ,که یک خانم خوش سلیقه فرانسوی, سر آشپزش بود ,این غذا را دوباره محبوب دلها کرد .
خیلی ساده مقدار بسیار زیادی پیاز را باید آنقدر در دمای کم سرخ کرد که شیرین شود و بعد در  مقداری آب گوشت پخته شود .
آب گوشت مقوی در کنار خواص پیاز و البته نان تست و پنیر آب شده, ترکیبی اعجاب آور را به ارمغان می آورد. امیدوارم با امتحان کردن این دستور آشتی دوباره ای بین انسان و سوپ برقرار بشود .اگرررررر با سوپ سیر نشد حتما با این یکی میشود 😁
