STIR UP SOME ORKNEY SPIRIT- How to make Hot Honey Roasted Roots

This recipe was invented to use a pile of Orkney root vegetables and a drop of golden Orkney honey resting in the bottom of a jar. It is delicious and versatile; you can use any firm vegetable. Celeriac in season and pumpkin are delicious.

I have topped the vegetables with salmon, chicken or lamb to cook slowly as a one-pot-in-the-oven meal.
